A pretty pink van by the sea

Hayley grew up running barefoot along Findhorn beach with an ice cream in one hand and a promise that one day she'd make her own. Years later she did exactly that, restoring a vintage Citroën H van, painting it the softest pink, and rolling it down to the dunes.

Every tub is churned with love and care, using cream from a single Moray dairy, real fruit grown nearby, and as little else as possible. The van also visits local fairs and festivals and markets, so following along on Instagram is the best way to catch her.

Findhorn

Tucked into a curve of the Moray Firth, Findhorn is a tiny village with an outsized soul. Its pale, pink-tinged beach stretches for miles between rolling dunes and a sheltered tidal bay where seals haul out, ospreys hunt, and yachts dance on their moorings. Sunrises here turn the whole sky to candy floss.

The village has been remade three times by the sea, with the present settlement dating to the 1700s. Today it's home to fishermen, artists, sailors, and holiday makers. Come for the ice cream; stay for the light.
